Jan 10: A new start.

Well, as I predicted, my goobers were up bright and early at 7am, rearing and ready to go.  I, on the other hand,  was ready to doze off where I stood.  But, despite the slow start to the day, a good nap time for all of us seemed to knock things back in to place.
   Diet wise, today could have been much better.  I've never been a breakfast person and, to be totally honest, I'm not huge on breakfast foods.  So it was a big bowl of leftover beef stroganoff for breakfast.  Lunch wasn't too bad though.  I made a turkey ranch panini on my George Forman grill, and had some grapes on the side.  Unfortunately, the hubby and I were bad, and finished off a cookie cake we bought yesterday for the Alabama game.  Truth be told, I'm glad it's gone, because now it won't be tempting me.  I've made a promise to myself not to buy another one for a LONG while.
   So, I know my meal pit falls are breakfast and lunch.  Dinner is usually my healthiest meal of the day.  And I know that buying any type of treat is just asking for trouble...I need to get back to the home made stuff.  No, it won't help trim my waist, but for some reason eating something I had to work really hard on just isn't as much of a temptation.  And, I can avoid all the processed junk that comes with store bought snacks.  Things like high fructose corn syrup, MSG, and our dear friend cellulose.  For those of you less versed in food additives, cellulose is wood pulp...and while it is a fiber, it most certainly does not help your body, as we are not meant to digest it!
   On to the afternoon.  The hubby got home from work at 5 which just feels so weird!  For the last few years, he has worked 12 hour rotating shifts, and was usually home by 7:45 at the earliest!  But no more 12 hour shifts.  He is an 8-5 man now, which means more regular exercise for the both of us.  And so I threw on my work out clothing, put on my new pedometer, and bolted out the door for some much needed mommy time.  It's been almost 2 months since my last real exercise, so i wasn't too surprised that running a mile JUST didn't happen.  But when you add the laps around the track, the elliptical, the treadmill, and the weight lifting, I got in a good 40 minutes of intense cardio.  That HAS to count for something!
     I will admit I was disappointed in how little I could jog.  I was closing in on two miles not two months ago, and now I'm back to half a mile.  But I had to remind myself that I haven't worked out in a while, I was tired, and I was pretty dang hungry.  So, a note to self, have some cashews an hour before!
   Still, coming home after a good workout just felt good.  I'm feeling energized, and proud of myself for just getting back to it.  And, I have to say, it was nice coming home to a delicious home cooked meal.  We decided to try something new tonight.  I found a recipe for home made sloppy joes online, and just could not pass it up.  Sloppy Joes are one of my favorite meals that we have given up because of all the chemicals and additives in the store bought cans.

  Well, let me tell you, I won't be going back to the store bought kind, EVER.  Although it has a bit of a spicy kick, the meal was delicious!  We just added some sour cream to the kids sloppy joes, to ease some of the spice, but for mom and dad, it was perfect!  We paired it with some Romaine hearts and Newman's Own organic greek vinaigrette dressing...which my son, yet again, ate with Relish. I'm still amazed that I have a two and a half year old son that loves salad.  I would definitely call this a kid friendly meal.  My daughter didn't want it...but she's a very picky eater. Sometimes I'm lucky if I can get anything but fruit and bread in her tummy.  But for your average to non picky eater, this meal is a hit.  Ayden wolfed down his sloppy joe, after finishing his salad of course.
    So, today could have been better, but it could have been worse.  My next "official" weigh in is in two weeks...with any luck I'll see some results!


Sloppy Joe Recipe:

Ingredients

  • 1 pound ground beef
  • 1 cup finely chopped onion
  • 3/4 cup finely chopped sweet red or green pepper
  • 1/4 cup finely chopped celery
  • 1/2 cup ketchup
  • 1 tablespoon white vinegar
  • 2 teaspoons chili powder
  • 1-1/2 teaspoons Worcestershire sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 6 hamburger buns, split

Directions

  • In a large skillet, cook beef, onion, red pepper and celery over medium heat until meat is no longer pink and vegetables are crisp-tender; drain.
In a small bowl, combine the ketchup, vinegar, chili powder, Worcestershire sauce, sugar and salt; stir into beef mixture. Simmer, uncovered, for 10 minutes, stirring occasionally. Serve on buns. Yield: 6 servings
TIPS:
  •   Most ketchup has high fructose corn syrup.  To avoid that, I'd recommend Organic ketchup, sold at target.  There are two or three good brands.  They tend to be a little sweeter, so skip the sugar in the recipe.
  • Don't worry about adding salt, unless you really want it.
  • Arnold brand buns have no HFCS or MSG, and are delicious!
  • Laura's Lean beef has no hormones, antibiotics, and the cows are grass fed!  But, to really make the recipe healthy look for ground chicken from Just Bare, which also has none of the above stuff added in!  Ground turkey, though healthy, does not always guarantee that the company didn't give the animals antibiotics or hormones.  So do your research and know your brands!
